Don’t like to eat oatmeal? Don’t like anything with oat? Go search for the benefits of oatmeal, and you will know why you should START eating oatmeal. Not only has it contained high fiber but also other nutrition that helps to fight high cholesterol, lower blood sugar level, protect heart, and assist weight control. [TIPS: Steel-cut oats and rolled oats have higher nutritious value then instant oat does, plus instant oats may contain other flavoring.]
For the first time I made this cookie, I used Nestum (Instant oats) since they are what I had that time, and all the oats melted into the cookies. Hence, the texture ran off as I couldn’t taste or chew any oat. I believe this recipe is meant for a healthy meal for people from all ages, perfect for breakfast, snack or tea-time.
As usual, cream butter and sugar, then add egg and blend. Combine flour, salt, baking powder, baking soda in a bowl and add them into the butter mixture. Mix in oats and make sure they are coated well with the batter. Scoop a spoonful of batter on the baking tray, arranged nicely and bake them. [TIPS: Lightly flatten the cookies before baking to ensure they are evenly baked.]
This time, I used rolled oats and I am satisfied with the result. However, I made a mistake. In order to lower down sugar intake, I put less sugar in these cookies, and the taste ran off, due to the baking powder and baking soda. [TIPS: Baking powder and baking soda are essential to make cookies crunchy but be careful with the amount as they taste weird if added too much!] So, the lesson learnt – Just add the sugar! No need hold back, we need plenty of sweetness in our life anyway, huh?
